Savory Mungbean Waffles {high in protein}

- ¾ cup mung beans (140gr)
- ⅓ cup chickpea flour 40gr
- 1 tbsp coconut oil, melted
- ⅓ cup water, warm
- ½ cup rice milk, room-temperature
- 2 tbsp nutritional yeast
- 1 tsp baking powder
- ½ tsp salt
- pepper to taste
- (fresh herbs according to your taste)
- Soak your mung beans overnight
- Blend the soaked beans with the rest of the ingredients in the blender
- Put the mixture into a bowl and place in the fridge for about 15 minutes
- Bake the waffles according to your iron's instructions
