Cinnamon Pumpkin Chai Oatmeal

Are you looking for a healthy, filling autumn breakfast? How would you feel about eating pumpkin pie for breakfast? Healthy, vegan pumpkin pie. The fusion of pumpkin and oatmeal is not only very yumi it further makes your whole house smell like a bakery. This Cinnamon Pumpkin Chai Oatmeal is def my current favorite breakfast. The creaminess of the pumpkin, the flavor from the spices, and the chai flavor combine to form the best thing I eat every year. Topped with different fruits, this breaky makes a powerbreakfast at its finest!

You should give it a go if you love pumpkin, chai, oats and the flavor of love and pre-christmas 🙂


 

Ingredients

1/2 cup + 2 tbsp rolled oats
1 tbsp agave syrup
1/4 cup Chai Tee made in hot water (any brand of chai tea is fine)
1/4 cup almond milk
1/4 cup pumpkin Puree
1 Tbsp. Cinnamon
1/2 Tbsp. Gingerbread Spice
1/2 tsp vanilla extract

Cinnamon Pumpkin Chai Oatmeal

Method

Combine the Oats, agave syrup and Spices and put them together with hot Chai Tee in a Pot.
Let it cook on a medium-high heat until bubbles start to form. But don´t forget to stir as it gets burned easily.When the Oats got a bit thicker, add the milk.
Wait until the oats start to bubble again, then turn down the Heat to a lower Level.
Now, add Pumpkin Puree.
Stir from time to time until you´ve got the desired consistency.
Finally, fill your Oatmeal in a Bowl and top with pomegranate seeds, peach slices or whatever you like.

    This looks DELICIOUS! What a gorgeous photo- I want to dive into my screen and eat those pomegranate seeds. Love how you actually used tea in this!

    Lara I really miss your old blog layout, you were unique and didnt look like the other bloggers and thats what made you interesting! But other than that, I love your recipes! Do you think its possible to make a vegan version of a wafer? I love these oats, they are so perfect for winter to warm up with! Yum:))

      Hi Laurel! Thank you so much! I loved it as well! But sadly this template leaves just limited room for customization and I really want to do that! 🙂 Further, it did not react responsive and I have 80% from traffic from phones so it made me sad that it didn’t look good on phones. I am still working to make it unique as before. I really hope you will also like the new version. If you have any inputs let me know. Wafers are a great idea I will think about it.
