Nutella filled Pancakes

  • ¼ cup coconut flour
  • ¼ cup almond flour
  • ½ cup coconut milk
  • 1 tbsp ground flax seed (substitute with 1.5 tbsp Chia seeds soaked in water)
  • 1 tsp vanilla extract
  • a pinch of cinnamon
  • 2 tsp baking powder
  • ------------------------------------------------------------------------
  • Topping
  • fresh figs
  • more Nutella as desired
  1. First we spread the Nutella with a spoon on baking paper and freeze for about 1 hour. See the "Nutella coins" in the picture below
  2. While the Nutella is freezing, we make the "egg substitute flaxegg"
  3. Put the flax seed (or alternately the Chia seeds) in a small bowl and whisk together with half of the coconut milk (1/4 cup)
  4. Set aside to thicken for 10 minutes
  5. Combine all ingredients in a mixer until smooth.
  6. Place in the fridge for 10 minutes.( don't skip this step!)
  7. Heat the oil in a small pan on medium heat.
  8. When the panĀ“s hot enough, start frying your pancakes.
  9. Fry for about 2-3 Minutes or when bubbles appear. Then place the Nutella "coin" in the middle and cover it with more dough.
  10. Flip over!
  11. For the Topping, simply slice the figs and decorate
  12. Finally, top your pancakes with as much chocolate spread as you like. (Nutella Spread from my Ebook )
