Cinnamon Cookies with a Chia-Berry Filling and Chocolate drizzle
  • ¾ cup buckwheat flour
  • ⅓ cup coconut flour*
  • ⅓ cup fine oats
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • 3 tbsp maple syrup
  • 1 tbsp natural sweetener (I used XUCKER, but coconut sugar works as well)
  • ⅓ cup melted coconut oil
  • 1 tbsp almond cream
  • ⅓ cup coconut milk
  • cinnamon as much as you like
  • a pinch of fine sea salt
  1. In a medium bowl combine all the dry ingredients
  2. Add the liquid ingredients and mix until well combined in a kitchen aid or other kitchen machine
  3. Depending on the brand of your coconut flour you might want to add more or less coconut milk. Have a look at my Youtube video to get an idea on how the dough should look like. You should be able to form balls but still the dough should not crack.
  4. Place the balls on the baking sheet and with your thumb form a whole.
  5. Depending on your desired size this should make up to 8 cookies or more
