Healthy Vegan Swiss Mountains Macaroons

Ingredients
  • 1 cup ground almonds
  • 1½ Cup finely shredded coconut
  • ⅓ cup agave syrup (substitute with maple or any other liquid sweetener)
  • 2 tbsp almond butter (can be substituted with any other nut butter)
  • ½ tsp cardamom
  • a pinch of fine sea salt
  • -
  • about 80gr (3oz) of non-dairy dark chocolate for the coating
Instructions
  1. Preheat oven to 350F (190deg)
  2. In a medium bowl combine the coconut and the almond with the cardamom and sea salt
  3. Add the agave syrup and the almond butter and use your hands to combine everything (seriously do this with your hands, it's the best feeling :))
  4. With your hands, form little mountain shaped cookies (I learned that I can form them better with wet hands)
  5. Bake them for 12-15 minutes or until the top of the mountain starts to get golden.
  6. Let cool and drizzle with melted dark chocolate
