Healthy Vegan Swiss Mountains Macaroons

- 1 cup ground almonds
- 1½ Cup finely shredded coconut
- ⅓ cup agave syrup (substitute with maple or any other liquid sweetener)
- 2 tbsp almond butter (can be substituted with any other nut butter)
- ½ tsp cardamom
- a pinch of fine sea salt

- about 80gr (3oz) of non-dairy dark chocolate for the coating
- Preheat oven to 350F (190deg)
- In a medium bowl combine the coconut and the almond with the cardamom and sea salt
- Add the agave syrup and the almond butter and use your hands to combine everything (seriously do this with your hands, it's the best feeling :))
- With your hands, form little mountain shaped cookies (I learned that I can form them better with wet hands)
- Bake them for 12-15 minutes or until the top of the mountain starts to get golden.
- Let cool and drizzle with melted dark chocolate
