Savory Mungbean Waffles {high in protein}

  • ¾ cup mung beans (140gr)
  • ⅓ cup chickpea flour 40gr
  • 1 tbsp coconut oil, melted
  • ⅓ cup water, warm
  • ½ cup rice milk, room-temperature
  • 2 tbsp nutritional yeast
  • 1 tsp baking powder
  • ½ tsp salt
  • pepper to taste
  • (fresh herbs according to your taste)
  1. Soak your mung beans overnight
  2. Blend the soaked beans with the rest of the ingredients in the blender
  3. Put the mixture into a bowl and place in the fridge for about 15 minutes
  4. Bake the waffles according to your iron's instructions
