my name is Julia and I am a lifestyle, food and fitness blogger from Austria. Some of you might remember that Lara and I have done a „Guest post“-exchange like this in the past already, where we shared recipes on each others blogs. I’m happy that Lara gave me the opportunity to share one of my favorite, healthy cookies recipes with you guys.
On my own blog, julesvogel.com, I started a new series just a few weeks ago, which is supposed to be a little „christmas countdown“. I’m sharing vegan christmas recipes on a weekly basis with my readers in german – so if you are german speaking, you should definitely check them out.
In case you don’t speak any german – don’t be sad, because I’m about to share my favorite recipe with you. It’s not only raw and healthy, but also super delicious, gooey and the perfect treat during the winter time. „Angel Eyes“ are a typical german or Austrian christmas cookie, but of course the original recipe contains eggs, a ton of butter and milk. With my recipe, you can indulge in yummy „angels eyes“ at any time while giving your body loads of nutrients, good carbs and good fats.
For the Chia Jam filling you need:
- 2 tbsp chia seeds
- 100 g frozen or fresh raspberries
- sweetener of choice
Put your raspberries, chia seeds and sweetener in a little pan and heat over medium heat. Use a fork to mash the raspberries once they are warm and wait until the chia seeds solidify your jam.
Put some chia jam into the holes of the cookies and put them in the fridge for half an hour. They can be kept in the fridge for several days – or COULD be kept in the fridge for that long (trust me, they will be gone quite soon).
