With autumn knocking on our doors, I have pulled out my warm winter scarf and my beloved colorful poncho. I re-established habits such as making myself a hot ginger tea in the morning infused with a lot of lemon juice (Vitamin C!) and I always have my fluffy, warm socks within reach.
And of course with autumn the season of pumpkins begins and Halloween is just around the corner. Next to all the sweets and treats I tried to incorporate autumn in my breakfast and made a healthy vegan Pumpkin Oatmeal with a tropical twist.
Today is on of these „not so beautiful“ fall days, where it just rains and I enjoy sitting inside, working on my MacBook, enjoying this heart and body warming pumpkin oatmeal with fresh peaches and almonds. I am so happy I finally have my new MacBook Pro with Retina Display
, since my last MacBook literally suffered death by drowning in peach (how ironically!) juice.
The retina display makes the color look so clear through the screen and just that little fact can make a girl like me pretty happy on a day like that. I’m simple.
So, concerning the recipe there is really not a lot you can do wrong. You will see that the recipe requires fresh pumpkin but, of course you can substitute by canned pumpkin. I suggest you take an organic, non-sugar added version such as Trader Joe’s Organic Canned Pumpkin
Since I had pumpkin in the house I preferred to use this one. So, get yourself a decent pumpkin and hit the kitchen!

- ½ cup rolled oats
- ½ cup pumpkin puree (made out of 1 small pumpkin)
- ¾ cup almond milk
- 2 tbsp maple syrup
- 1 tbsp cinnamon
- a pinch of nutmeg
- 1 tsp vanilla extract
- Topping (optional)
- 1 fresh peach
- chopped almonds
- Rawnola or Granola
- First you blend the meat of the pumpkin in the blender in order to get the puree
- Then, pour the almond milk in a saucepan and bring to boil.
- Add the pumpkin puree and the oats as well as the rest of the ingredients, cover the saucepan and cook over medium heat for about 5 minutes or until sticky.
- Place the mixture in a bowl and add the topping.
