Delicious savory waffles high in plant-based protein with soaked mung beans as the main ingredient
Where do you get your protein from?
These savory mungbean waffles are my straightforward answer to people asking „Where do you get your protein from?“
It is a question that never seems to disappear. The fear of people who decide to avoid meat, of having not enough protein. Savory waffles which are almost entirely made of protein rich ingredients seemed to be a yummi, legit way to get in that protein.
The main ingredient for these waffles are soaked mung bean. I saw a non-vegan recipe on Pinterest and thought that I’ll give it a try (plant-based) with mung beans as the main actor and just 5 more other ingredients:
CHICKPEA FLOUR
RICE MILK
COCONUT OIL
NUTRITIONAL YEAST
BAKING POWDER
(WATER)
Mung beans and Chickpea flour are an excellent source of protein, fiber, antioxidants, and phytonutrients. Further, they are rich in Iron, which carries oxygen in blood and ultimately helps you to be more focused. Another interesting fact I found was that if you soak them and eat them (raw – not cooking them) they have a lower amount of calories while keeping all the vitamins and fiber.

- ¾ cup mung beans (140gr)
- ⅓ cup chickpea flour 40gr
- 1 tbsp coconut oil, melted
- ⅓ cup water, warm
- ½ cup rice milk, room-temperature
- 2 tbsp nutritional yeast
- 1 tsp baking powder
- ½ tsp salt
- pepper to taste
- (fresh herbs according to your taste)
- Soak your mung beans overnight
- Blend the soaked beans with the rest of the ingredients in the blender
- Put the mixture into a bowl and place in the fridge for about 15 minutes
- Bake the waffles according to your iron's instructions

This waffle looks to die for! Who says vegans are protein-deficient?! It’s such a contrived myth that I’m still dumbfounded people believe. Seriously, I can eat more protein than many non-vegans too!

These are great! I subbed unsweetened applesauce for the coconut oil, and it was still perfect. Was a bit worried smelling the mix before cooking, but the finished product was just slightly sweet, nutty and delicious. My kids destroyed them with a bit of maple syrup.
