This healthy breakfast tastes like summer in a bowl. It’s easy to make and there is no refined sugar necessary. I call it my easy coconut milk Oatmeal with fruits for every day. Especially now in summer I like the coconut taste paired with a slight vanilla note and by adding tons of fruits, I feel a little bit like on a vacation on an island during breakfast.

- ¾ cup rolled oats
- ¼ cup quinoa (cooked)
- 1½ cup coconut milk
- ½ cup water
- ¼ cup coconut flakes
- 1 tbsp coconut sugar
- 1 tbsp chia seeds
- 1 tsp vanilla extract
- If you already haven't: Cook the quinoa according to the instructions on the package
- Add oats, coconut milk, water, vanilla, coconut flakes, coconut sugar and chia seeds to the pan and bring to a simmer on medium to low heat. Stir until the water is just absorbed and the porridge has thickened.
- Add oatmeal to a bowl and (if you like) add more coconut milk on top
- Decorate with seasonal fruits or nut butter as you desire
