Vegan sunday waffles with an acai-berry sauce

Thanks for following me on my new Homepage! So excited. The layout is not the final one since we have a special theme in mind that will be implemented. So stay tuned.


To celebrate I like to share my favorite Vegan waffles recipe with you.

Ingredients for 4 people (or 2 hungry ones)
1 cup almond flour (or any other flour you like)
1 tsp baking powder
1/2 tsp baking soda
1/4 cup coconut sugar
1 cup coconut milk
3 tbsp coconut oil
1 pinch vanilla extract
1 flax egg*
optional: 1 tbsp maple syrup

*1 Tbsp flaxseed meal (ground raw flaxseed)
2 1/2 Tbsp water, stir and let sit for ten minutes to thicken

Method
In a bowl mix together the flour, baking powder, baking soda, coconut sugar,and the vanilla extract. In a separate cup mix the coconut oil, coconut milk and flax egg.
Add the wet ingredients to the dry ones and stir until well combined.
Let sit in the fridge while the waffle iron is heating up.

Grease the iron with some coconut oil and the cook waffles until golden brown and slightly crispy.

For the sauce, heat up in a small pan 2 handful of fruits you like (I used strawberries and raspberries) with 3 tbsp of agave syrup until a jelly consistency appears. let cool down and add 1 tbsp of Acai powder. I used the one from Organicburst.
Pour over waffles and decorate with more fruits.

    Sure! I love your new blog by the way, wish you success for it :)) I wanted to ask, do you use naturkostbar products in your recipes?
