This Vegan, Gluten-free coconut loaf with pomegranate glaze is not only an eyecatcher on birthdays, it is also totally yummi, moist and easy to make! Usually, when I bake, I substitute the “egg” component either with Chia-Seeds, Flax seed or apple sauce, but for this recipe I wanted to achieve some fluffiness and therefore tried the Vegg-Egg for the first time….

Pityriasis rosea – WHAT? That is exactly what I said when I learned why I had this red spots all over my upper body. I never heard of something like this and I also never experienced any other skin conditions during my life.
I had some overload of oatmeal for the past week, so I thought YES! Let’s make some waffles on the weekend. Fluffy Vegan Breakfast Waffles. For me, waffles are a weekend breakfast since they are more time consuming than oatmeal or granola with fruits.
I think my food journey is a rather long and unsteadily one. I have been through phases, experiments, and diets. But then again who hasn’t. You read something, you see progress pictures and then you want to change something and try.
Sometimes it turns out well and sometimes not.
Well, let’s talk a little bit about that “well”. When you change your eating behavior, when do you feel like you have successfully changed something?
Fun fact first. I don’t like bananas. I don’t like the mushy consistency and the feeling it develops in my mouth. Luckily, I found out some months ago that I really love banana bread. (and yes I always loved Nicecream from the first day I’ve tried it.)
Ok back to the banana bread. I really don’t know what it is but this intense, flavor rich, dense, moist thing called banana bread has somehow twisted my mind and for a long time I can hardly think of anything else. It’s like falling in love with all the butterflies in your stomach. Except that I have banana bread in my stomach.

I wanted to write this blog post a long time ago. Mainly because I ‘ve read so many comments online of people asking other people how many calories they eat and if it is ok to eat meat or cheese or honey or whatever. It tells me that there is a thirst of knowledge out there and many are confused.

YAY! I am celebrating one year since my ebook was published! I never expected that people like it that much and that my recipes spread all over Instagram, Pinterest and many more platforms. You are amazing and I am happy I can spread the message of healthy, vegan BUT also YUMMI desserts and overcome the idea that icecream is always bad and fatty. There is no need to avoid dessert when you are starting a healthy lifestyle. It comes down to using the right ingredients.

I don’t know if you are familiar with raw brownies?
Brownies are like the perfect treat to make raw because their consistency anyway is very dense and gooey. Of course, I mean dense and gooey int he best way possible.
I LOVE gooey brownies when they are still a little bit warm, preferably combined with Icecream.
When life gives you chocolate and coconut make a Vegan Chocolate Ganache Pie! Seriously this pie is so good I made it two days in a row in different versions. I share with you my second version because I think this one has the perfect smooth consistency. I don’t have anything else to write about it you simply have to try it and ask my questions whenever some are popping up! I also appreciate every feedback when you decide to make this dark and decadent pie.
It is always a little bit of a gamble with this airplane food. Sometimes you are lucky and sometimes you are starving. In my case the second case was commonest.
What about if it wouldn’t be about the weight loss but more about just being healthy and happy and friendly to our bodies?
To be honest, I have to say it was not easy to veganize this traditional german sugar and butter based Christmas cookie. Think I failed twice because I wanted to use fancy flours or other unusual ingredients.
Some people may think it is impossible to stay healthy or skinny when eating over 2500kcal per day.
I get it.
It is confusing.

The best food to ever have graced this earth and all other foods will bow down to their glory! HAHAHHA!!
