It’s Christmas soon and I guess I am not the only one, who already indulged on too many cookies? Well, I believe it’s totally fine, since Christmas is only once a year! Last week was already pretty stressful with everyone hyping around about not finding the right Christmas presents or complaining about the freezing cold weather outside. So, I decided to look myself in my flat for a day and do some soul baking. The result was these Healthy Vegan Swiss Mountains Macaroons dipped in dark chocolate.
They are not only very easy to make, they are also gluten-free, refined-sugar free, dairy free and delicious! They are not as fluffy as

They are not as fluffy as traditional macaroons due to the ground almonds I added, but I really like the consistency as it reminds me of a nut cookie with a hint of vacation due to the coconut.

I guess Halloween is the day where we eat the most sweets. Next to Christmas and Easter and birthdays of course 🙂 SO, since I am from a country where we don’t celebrate Halloween, I thought I bring in a scary guest post from a real American lady. I don’t really like granola when it doesn’t contain chocolate. But to be honest, sometimes you need to step outside your comfort flavor zone. Because if you do you will find so many new things that could be awesome as well.

An oatmeal bowl that tastes exactly like a vanilla cake just without the nasties and instead packed with healthy proteins from nuts- fuel your morning with this healthy dish and never worry about your proteins anymore. This is how my Vegan gluten-free, Protein packed Vanilla Oatmeal came to live.
With everyone warning me about the side effect of a plant-based diet I set my goal on incorporating natural proteins already in the morning. This morning, I set out on a mission to create a higher protein oatmeal that could easily be done in 20 minutes or packed for breakfast on the go.
The Oatmeal has a very thick and creamy texture due to the coconut flour and reminds me of vanilla batter I used to eat as a kid.
Notice that I added vanilla protein powder in my recipe below. I use the one that I ordered from Foodspring since I really like the natural vanilla taste. If you are uncomfortable with protein powder simply substitute with 1 tbsp of coconut flour or leave it out completely. It will still taste amazing.
- ½ cup gluten-free oats
- 1 tbsp coconut flour
- ¼ cup sliced almonds
- 1 cup of almond milk
- ¼ cup tap water
- 1 tsp vanilla essence
- 1 tbsp Chia seeds
- 1 tsp peanut butter (I used the smooth one from Foodspring)
- 1 scoop of vegan vanilla protein powder from Foodspring)
- 1 tbsp maple syrup
- rolled oats, edible flowers and sliced fruits of choice for topping
- Combine oats, milk, and vanilla in a saucepan and cook until most of the liquid is absorbed. Reduce heat and whisk in the chia seeds and whisk until fluffy. (Chia seeds might take up to 2 minutes until fully swollen up.
- Stir in the vanilla protein powder, maple syrup, sliced almonds and coconut flour until fully combined
- If the mixture is extremely thick add the extra ¼ cup of tap water
- In a bowl covered with foil leave in the fridge for one hour before adding your toppings and starting to eat.
It is no secret that I love granola! However, store-bought granola often contains a lot of added sugar and if you go with an organic, healthy one they are often quite pricey. So if you are a granola junkie and cereal killer like me I got you covered, because this healthy 5-Ingredient Vanilla Tahini Granola will meet all of your expectations concerning flavor and the perfect amount of sweetness.

I am a huge fan of Granola but recently I made more batches of “Rawnola” as it simply tastes so good as a snack but also on smoothie bowls or sprinkled over Nicecream. So “Rawnola” basically is the unbaked Granola and consists in most cases of dates (the thing that holds everything together) and groats, oats, coconut and basically everything your heart desires. I don’t know if there are any rules to Rawnola, but I don’t really care!
